Healthy, Delicious Vegan Recipes

November is World Vegan Month, a great time to celebrate the many delicious recipes that can be made without using any ingredients derived from animal products.

The meals, appetizers, and desserts below contain no meat or dairy, or any other animal products. Many of these dishes get their nutritional value from proteins like beans, whole grains like brown rice, and different types of vegetables and fruits. In addition, instead of flavoring the food with things like butter, these recipes call for a wide variety of spices.

Try making one of these dishes to enjoy with your friends and family!


Avocado-Corn Salsa: This simple starter is quite versatile—serve it as a dip with baked tortilla chips, or use it to top tacos or an omelette.

Warm Beet & Spinach Salad: This salad, featuring cooked beets, is a great first course or can pair perfectly with a sandwich or black bean burger.

Tuscan Kale & White Bean Bruschetta: This elegant app is relatively easy to make. In addition to being a bruschetta topping, you can toss the spread with pasta for a savory meal.

Triple Bean Salad: This protein-packed salad makes a flavorful, low-fat starter or side dish.

Main Dishes

Jamaican Rice & Peas: In this dish, the “peas” are actually kidney beans—a tasty source of protein. This entrée is low-fat and high in fiber and calcium.

Cartwheel Pasta with Peppers & Onions: This hearty meal stars several delicious veggies and is perfect for a cold winter’s night.

Black Bean & Hominy Succotash with Barbecued Portobello Mushrooms: This entrée is high in protein, provides healthy fiber, and tastes delicious, too!

Savory Orange-Roasted Tofu & Asparagus: This delicious tofu dish features a tangy sauce. Serve it with brown rice.

Indian-Spiced Eggplant & Cauliflower Stew: This rich meal, packed with flavorful spices, pairs nicely with couscous.


Dairy-Free Banana Rice Pudding: This sweet treat is so creamy, you won’t miss the dairy at all.

Apple Confit: Sort of like apple pie without the crust, this delicious dessert has only 98 calories per serving!
