Recipe: Spinach & Brie-Topped Artichoke Hearts

Stand out from the dip crowd this holiday season by preparing this quick and easy deconstructed version of hot spinach-artichoke dip. Stuff artichoke hearts with lightly seasoned cooked spinach and melt brie on top for a nutritious and healthier version of the classic appetizer. As a bonus, this recipe has significantly less calories, fat and sodium than the traditional dip.

Ingredients

Makes 18 servings

1 9-ounce box frozen artichoke hearts

⅔ cup cooked chopped spinach

1 teaspoon lemon pepper

¼ teaspoon salt

18 thin slices brie

Preparation

  1. Preheat broiler. Prepare artichoke hearts according to package directions.
  2. Combine spinach, lemon pepper and salt in a small bowl.
  3. Top each artichoke heart with the spinach mixture and Brie.
  4. Broil until cheese melts, 1 to 2 minutes

Tips

Don’t have lemon pepper? Use lemon juice! Combine a teaspoon of lemon juice with a teaspoon of ground black pepper.
