Recipe: Mango-Date Energy Bites

Sweet, sticky dates act as the glue for these no-cook energy balls. Perfect for outdoor activities like hikes or during sports, this healthy snack travels well. They are so delicious you may even enjoy them as a treat! Make ahead when you know you have a busy week, and store in an airtight container at room temperature or in the refrigerator for up to a week to grab anytime you need a pick-me-up.

Ingredients

Makes 20 servings

2 cups pitted whole dates

1 cup raw cashews

1 cup dried mango or other dried fruit

¼ teaspoon salt

Preparation

Active time 15 minutes

Total time 15 minutes

Process dates, cashews, mango and salt in a food processor until finely chopped. Form into about 20 balls, using 2 tablespoons each.

Tips

This recipe works well with many dried fruits! You can mix it up each time you prepare it by swapping dried mangos for options such as dried pineapple, cherries, apricots and more. Take your experimentation even further by either using ½ cup each of two dried fruits or 1/3 cup each of three dried fruits for even more flavor!
