Ask a Health Advocate: How can I spruce up my salads this spring?

What better way to celebrate changing seasons by changing up the ingredients in your salad? Incorporating fresh spring fruits and vegetables can make your everyday lunch or dinner salad more fun, festive, and most importantly, delicious.  With spring in full swing, here’s what’s in-season right now:

Vegetables: Artichokes, asparagus, broccoli, butter lettuce, collard greens, corn, green beans, snap peas, snow peas, spinach

Fruits: Apricots, avocado, limes, mango, oranges, pineapple, strawberries

Don’t be shy about incorporating these yummy seasonal fruits and veggies into your springtime salads! Here are a few recipes to get you started:

Avocado and Mango Salad: This colorful salad includes a tasty mix of fruits (mangos and avocados). Plus, a spicy lime dressing gives this salad a little extra kick. Want to include more protein in this fun salad? Just add grilled chicken or fish.

Strawberry Spinach Salad: In this yummy salad, the sweetness of strawberries pairs nicely with the fresh taste of spinach. Nuts and seeds give this salad a little extra crunch.

Radish, Celery and Snap Pea Salad: This light salad blends the bold taste of peppery radishes with the fresh, healthy greens of spring.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette: Delicious and easy to make, this salad incorporates many different flavors to bring out the fresh tastes of the new season. Nuts and cheese add protein, while citrus dressing and oranges provide sweet and tart flavor.

Jicama Corn Salad: This bright, colorful salad is easy to make and fun to eat! It can stand on its own or pairs nicely with your favorite healthy Mexican entree.
