Summer is a great time to enjoy fresh produce. There are many delicious options in season—meaning they’re ready to harvest at peak flavor and nutritional value. It also means they’re generally less expensive and more readily available. Even better, summer provides you an opportunity to switch up your cooking methods and enjoy tasty grilled vegetables. In honor of Eat Your Veggies Day, we’ve collected some delicious grilled vegetable recipes for you to try.

Italian Grilled Vegetables – This recipe includes vegetables of almost every color! It also uses fresh herbs and a touch of balsamic vinegar for a fresh taste. You’ll probably want to eat outside to enjoy these veggies.

Grilled Cauliflower Steaks – Perfect as a side or its own meal, this tasty recipe is sure to please! Plus, it is an easy way of cooking cauliflower since you don’t have to cut it all apart, but simply cut 2-3 large slices.

Grilled Mexican Street Corn (Elotes) – This recipe is a must-try for fans of Mexican food. The creamy, melted chile-lime sauce and light char perfectly complement the sweetness of the corn.

Grilled Tomatoes – Simple, quick and delicious, this recipe only takes about 15 minutes total to prepare.

Grill-Roast Carrots with Sweet Soy Glaze  – This recipe takes a little longer, but it is well worth the wait. Instructions describe cooking on a charcoal grill, but it can be easily made on a gas grill too.

Grilled Green Beans – This versatile vegetable takes on new flavors when cooked on the grill. Aim for a slight char for added flavor. While the recipe calls for minced garlic, using cloves of garlic improves the taste. If you’re a fan of garlic, the grilled cloves may be your new favorite way to enjoy it.
