Red and juicy, strawberries are a wonderful fruit to enjoy in the warm summer months! Not only are they delicious, but strawberries are great sources of vitamins, antioxidants, and fiber. It’s great that something so sweet and tasty can pack such a powerful nutritional punch!
Spring is the season for fresh strawberries and the best time of year to indulge in your local produce. Since they are such a good source of nutrition, we wanted to share with you some of our favorite recipes that include strawberries.
Breakfast: Super Antioxidant Strawberry Smoothie
Makes one smoothie:
1 cup strawberries, halved
2 tablespoons almond butter
1 handful spinach
1 cup almond milk
1 handful of ice
Directions: Blend until smooth and drink up!
Lunch: Strawberry and Spinach Salad
Makes one salad:
2 cups spinach leaves
1 cup strawberries , halved
2 tablespoons crumbled feta cheese
1/3 cup walnut pieces
Balsamic vinegar to dress
Directions: Toss all ingredients together in a bowl and enjoy!
*** Optional: Add some sliced grilled chicken breast or turkey for extra protein.
Snack: Nuts and Berries, Oh My!
1/2 cup sliced strawberries
1/3 cup blueberries
1/3 cup raspberries
1 handful almonds
Directions: Store in a snack-size container for a quick, healthy snack!
Dinner: Grilled Pork and Strawberry Mango Salsa
For the salsa (makes 4 servings):
¾ cup strawberries, diced
¾ cup mango, diced
2 tablespoons red onion, diced
2 tablespoons cilantro leaves, diced
2 teaspoons honey (or more to taste)
1 lime, juiced
Directions: Mix all ingredients in a bowl and serve over your favorite cut of grilled pork.
Dessert: Strawberry, Kiwi and Yogurt Parfait
1 cup strawberries, diced
1 kiwi, sliced
1 cup plain Greek yogurt
Dash of cinnamon
Drizzle of honey
1 tablespoon slivered almonds
Directions: Layer ingredients in a cup or bowl and enjoy!
